Avial (Aviyal) is a popular dish in Kerala made with mixed vegetables, coconut, and yogurt. It is an easy and simple side dish to make in 30 minutes.
Easy and Healthy South Indian Side Dish:
The avial recipe is a healthy side dish made with mixed vegetables, yogurt, cumin seeds and coconut. Coconut is loaded with nutrition like Calcium, Vitamins, and minerals.
It also helps to keep the hair and skin healthy. Coconut, Cumin seeds, yogurt (curd) and green chilies together give an excellent taste to the Vegetables. Avial is my favorite dish, so I used to make it often.
My little kid Aldrich do not prefer eating vegetables, but he love this dish because of the coconut and sour yogurt flavor. Whenever I have the vegetarian guests, I make this avial and sambar rice.
Sambar Rice with Avial is a delicious and healthy combination.
Smart Cooking Tips:
- For making this Avial, the yogurt (curd) should be in sour taste.
- This is not a traditional Avial recipe I used only carrot, beans and potato in this recipe. But traditionally they use a variety of vegetables like Plantains, Drumsticks, Snake gourd, and Yam.
- For tampering use coconut oil, it gives excellent flavor and taste. If you don’t have coconut oil, replace it with regular cooking oil.
- Avoid chopping the vegetables into tiny pieces, it should be little bigger pieces.
- Cook the vegetables until it becomes soft but not mushy.
A quick vegetarian side dish:
Avial is a quick side dish for rice varieties. I used store bought shredded coconut that reduces the time and effort to half in this recipe. Because personally I feel grating the coconut is a time-consuming work.
Also, I used only a few varieties of vegetables like carrot, beans, and potato, which takes less time to clean, chop and cook. Traditionally Avial is thick in consistency, but if you like to make it thin like a curry for white rice.
Boil the vegetables in extra water, add grounded coconut paste, yogurt and make it thin and serve with white rice with papad.

- 100 gms GREEN BEANS
- 100 gms CARROTS RAW
- 75 gms POTATO
- 0.25 cup SHREDDED COCONUT
- 2 tbsp PLAIN YOGURT
- 1 no GREEN CHILIES
- 0.50 tsp CUMIN SEED
- 1 tsp SALT TABLE
- 0.25 tsp TURMERIC POWDER
- 0.50 cup WATER
- 1 tsp COCONUT OIL
- 5 no CURRY LEAVES

Peel and chop the potato, carrot and green beans into small pieces.

In a blender or mixer grind the shredded coconut, cumin seeds, and green chilies together until smooth and keep it aside until needed.

In a pan add chopped potato, green beans, carrot, salt, water and turmeric powder. Cover and cook until the vegetables get 3/4 done.

Uncover the lid and add the grounded coconut mixture. Cover and cook until the vegetables become soft (but not mushy). You should taste each and every piece of the vegetable in avial).

Add yogurt and mix well. Check for the salt and remove from a heat immediately.

In a small skillet heat coconut oil, add curry leaves and add it to the avial.
How to serve Avial?
Serve Avial with Sambar Rice. Avial, Sambar Rice, and Papad together makes an excellent combo.
