BAKED SALMON IN FOIL WITH GREEN MARINADE

Baked salmon in foil with green marinade is an easy and healthy dinner recipe. Salmon seasoned with spices and green marinade, wrapped in the foil and baked.

How to make green marinade?

The green marinade is a flavorful and healthy marinade with fresh herbs. Coriander leaves, mint leaves, ginger, garlic, green chilies, and coconut together makes a flavorful and aromatic marinade for the salmon. This marinade is easy and simple to make, all you need is the mixer or blender to grind the herbs to a smooth paste. I made this smooth and silky green marinade with my new blender “Blendtec”. It just grinds the herbs and coconut smoothly with only a few drops of water.

  1. Rinse coriander leaves, mint leaves and green chilies in water.


2. In a blender place, the coriander leaves, mint leaves, green chilies, coconut, garlic, ginger, salt and grind it to a smooth paste. If it is difficult to grind, sprinkle little amount of water and grind.

3. Check for the salt taste before applying the marinade on the salmon fillet.

Smart Cooking Tips:

  1. Baking time varies with the thickness of the salmon fillet. Make sure to cook until the salmon flakes easily with a fork.

2. Seal the foil edges properly because salmon oozes water while cooking. Sealing the foil edges helps to avoid spilling the cooking liquid from salmon.


3. You can use your favorite seasonings and marinade in this recipe.


4. Apply the marinade and seasoning evenly on the salmon fillet.


5. Avoid using too much of water for grinding the green marinade, it should be in a thick consistency. If you are using the frozen coconut, make sure to thaw it before grinding.

Baked salmon with green marinade is a healthy and low-carb dinner. Salmon is an excellent source of Omega 3 fatty acids that supports cardiovascular health. Also, it is a good source of protein and anti-oxidants. Green Marinade is made with fresh herbs; it gives an additional health benefit and an awesome flavor to the salmon fillet. Also, baked salmon recipe includes very less amount of oil. The spices used to season the salmon like coriander powder is a healthy and flavorful spice that helps in lowering the cholesterol and blood sugar level.

Ingredients
  • 20 oz SALMON
  • 2 tsp SALT
  • 1 cup CILANTRO (CORIANDER)LEAVES RAW
  • 0.25 cup MINT LEAVES
  • 1 no GREEN CHILIES
  • 2 tbsp COCONUT SHREDDED
  • 3 gms GINGER
  • 3 gms GARLIC
  • 1 tsp LEMON JUICE RAW
  • 1 tsp RED CHILI POWDER
  • 2 tsp CORIANDER POWDER
  • 1 tsp OIL
Instructions
  1. Pre-heat the oven to 375 degrees. 

  2. Green marinade: In a blender add coriander leaves, mint leaves, green chilies, garlic, ginger, coconut, salt and grind it to a smooth paste. Check for the salt taste and add accordingly before applying on the salmon fillet.

  3. Season the salmon with salt, red chili powder, coriander powder, oil and lemon juice. Sprinkle little water and rub the seasonings evenly on both sides of the salmon fillet.

  4. Place the seasoned salmon fillet in the center of a foil and spread the green marinade evenly on the salmon fillet. 

  5. Fold the sides of the foil on top of a salmon fillet and green marinade and cover completely and seal the foil edges properly.

  6. Place the foil packet on center rack of an oven and bake for 30 minutes or until the salmon gets cooked thoroughly. Using a large spatula transfer the foil packet to the plate and serve.
