The breakfast burrito is a quick and filling breakfast with scrambled eggs, avocado, sausage, beans, onion, cheese, avocado, onion, and tomato. I made these burritos simple with just basic ingredients like scrambled eggs, avocado, onion, shredded cheese, and tomato. You can make this burrito quickly in 10 – 15 minutes and wrap it with a foil or parchment paper and grab and go quickly before you leave the house in a busy morning. You can have it easily on the go.

Smart Cooking Tips:

1. You can use any variety of tortillas like corn, flour or wheat tortilla in this recipe. Even chapati (Indian flat bread) works good for this recipe.

2. You can add your favorite fillings and sauces like beans, sausage, salsa, and sour cream.

3. Wrap one side of the burrito with foil or parchment paper in order to keep the fillings from falling.

4. Warm the tortillas slightly on the stove top using a skillet or in the oven. Overheating tends to make tortillas crispy.

Ingredients
  • 2 no CORN TORTILLA MEDIUM
  • 1 no AVOCADO
  • 2 no EGG WHL RAW FRSH
  • 2 tbsp ONIONS RAW
  • 2 tbsp ROMA TOMATO
  • 0.25 tsp SALT TABLE
  • 0.25 tsp PEPPER BLACK
  • 2 tbsp CHEESE FRSH QUESO FRESCO
  • 1 tbsp CILANTRO (CORIANDER)LEAVES RAW
Instructions
  1. In a pan heat a tsp of oil, add eggs, salt, pepper and cook until the eggs get cooked thoroughly. Dice the avocado. Chop the onion and tomatoes finely.

  2. Warm the tortillas slightly and place the scrambled eggs, avocado, chopped onion, tomato, cilantro and grated cheese.

  3. Roll the tortillas tightly and wrap one end of the tortilla with parchment paper or foil (to avoid the fillings from falling) and serve.
