Carrot Cake Energy Bites

These carrot cake bites are healthy, naturally sweetened, slightly chewy and loaded with the oats and dry fruits. Perfect for a snack on the go, breakfast and post workout snack.

The taste and flavor of the carrot are not overpowering in this recipe. It gives a mildly sweet and crunchy taste to the energy bites. Adding peanut butter gives a smooth cookie dough texture. You could replace the peanut butter with almond butter. If you like to make these energy bites nut free but still you like that soft doughy texture, you could use the sunflower seeds butter.

Dates are added for the sweetness I used the Medjool dates. My family is a huge fan of Medjool dates so I never tried out other dates option available in the market so far. The soft and naturally sweetened dates give a sweet taste with added health benefits compared to the other sweeteners. If you try other varieties of date please let me know in the comments I would love to know the other best dates varieties available in the market.

You could replace the dates with honey or maple syrup as well. Cashew nuts can be replaced with almonds or pecans.

I added only a quarter tsp of Cinnamon powder in these energy bites, you could up to half a tsp. Vanilla extract and nutmeg powder can also be added for the flavors.

How to make these vegan carrot cake bites?

Vegan carrot cake bites are easy to make with only 6 ingredients. My 8 years old son Aldrich loves these energy bites. I make these energy bites in a bulk and store in the refrigerator and enjoy all week long. It is perfect for snacking, breakfast on the go, picnics, healthy dessert, and potlucks.

Food processor or powerful blender is necessary to make these energy bites with the perfect texture. I used a Cuisine Art food processor that is perfect to make all types of energy and protein bars. It just blend the dry fruits perfectly with the other ingredients. Here are the few varieties of energy balls, I made with the Cuisine Art Food Processor. Oatmeal Peanut Butter Energy Balls, Date Nut Ladoo, and Chia Seed Energy Balls.

These vegan carrot cake energy bites are healthy, naturally sweetened, slightly chewy and loaded with the oats and dry fruits. Perfect for a snack on the go, breakfast and post workout snack.

Ingredients
  • 1 no Carrot Medium Size
  • 1 cup Old Fashioned Quaker Oats
  • 5 no Medjool Dates Pitted
  • 0.25 cup Roasted Cashew Nuts or Almonds or Pecans
  • 0.25 tsp Cinnamon Powder
  • 1 tbsp Peanut Butter
Instructions
  1. Dry roast the oats until nice nutty aroma comes out.

  2. In a food processor, ground the carrot coarsely. Add roasted oats, roasted cashew nuts, cinnamon powder, dates, peanut butter, and blend until all the ingredients combined well.

  3. Roll them into small balls and serve or store in the refrigerator for a week and enjoy.

Serve them as a snack or dessert or breakfast.
