Homemade cookies are a tasty and delicious snack for kids. Carrot cookies are healthy that is made with freshly grated carrots, oatmeal, and whole wheat flour. I added sugar in this cookie; you can also replace it honey or maple syrup for a healthier option. Cookies are easy and simple to make at home all you need is few ingredients, baking sheet and oven. I often bake carrot cookies at home because it includes oatmeal and carrots that are an excellent way to incorporate carrot and oatmeal in kids diet. Smart Cooking Tips:

  1. I used 1 tbsp of ground flax seed in this recipe; you can replace it with one egg. Flax seed is an excellent replacement for the eggs in baking. Replace one egg by soaking one tbsp of ground flax seeds in three tbsp of cold water for 5 minutes or until it becomes sticky egg like consistency.

  2. The dough will be thick and sticky so mix properly until all the ingredients mix properly.

  3. You can replace the sugar with honey or maple syrup, but make sure to reduce the melted butter.

  2. The cinnamon powder gives an excellent taste and flavor to the carrot cookies. If you do not have it at home, you can easily make it at home by grinding cinnamon sticks to a fine powder in the dry blender. You can also make cinnamon powder in bulk and store it in an airtight container for later use.
