CAULIFLOWER EGG FRIED RICE – PALEO RICE

Cauliflower egg fried rice is a healthy, low-carb and paleo recipe. This paleo rice is easy and simple to make with just a few ingredients.

Paleo Rice:

Cauliflower florets grated to a fine rice consistency that tastes soft and similar to the white rice. Cauliflower rice is an excellent alternative to the white rice. Cauliflower is a healthy and low-calorie vegetable that provides vitamins, protein, and minerals.

A small portion of cauliflower makes you feel fuller for a long time. So this cauliflower rice is an excellent recipe for the weight watchers and dieting people. You can avoid adding eggs in this recipe but eggs provide an additional nutrition, taste, and protein to this dish.

Smart Cooking Tips:

1. Grate the cauliflower florets to a fine rice consistency without leaving the bigger chunks.

2. You can add any of your favorite vegetables like carrot, beans, cabbage and bell peppers.

3. You can add soy sauce in this fried rice recipe. I skipped adding soy sauce to make a healthy and sodium less fried rice.

How to serve cauliflower fried rice?

Serve cauliflower fried rice as it is or with Chicken Manchurian or Fish Manchurian.

Cauliflower egg fried rice is a healthy, low-carb and paleo recipe. This paleo rice is easy and simple to make with just a few ingredients.

Ingredients
  • 40 gms CAULIFLOWER RAW
  • 0.50 cup PEAS GREEN RAW
  • 0.50 cup ONION CHOPPED
  • 1 tsp SALT
  • 2 no EGGS
  • 0.50 tsp PEPPER POWDER
  • 1 tbsp OIL
  • 0.50 tsp GARLIC CHOPPED
  • 2 tbsp SPRING OR SCALLIONS ONIONS CHOPPED
Instructions
  1. Pulse the cauliflower florets in the food processor to a small grain consistency. You can even grate the cauliflower florets in a carrot or cheese grater. Beat the eggs with salt and pepper separately and keep it ready.

  2. In a pan, heat oil, add finely chopped garlic and saute until nice aroma comes out.

  3. Add chopped onion and cook until the onion becomes soft. Add peas, cauliflower florets and cook for 3 - 4 minutes until the raw cauliflower smell goes off.

  4. Push the cauliflower mixture to a corner of the pan and make space for eggs. Add eggs and make scrambled eggs and mix with the cauliflower mixture. Add salt, black pepper powder and mix well. Garnish with chopped green onions.
