Chicken fried rice is a simple fried rice recipe with chicken, eggs and rice. It is easy to make in less than 30 minutes if you have left-over rice handy.

How to cook white rice?

You can cook white rice in a rice cooker or pressure cooker or in a saucepan on the stove top. The amount of water used for cooking the rice depends on the quality of the rice. Cooking rice to the right consistency is important in the fried rice. You can use any variety of rice like long grain rice or short grain rice or brown rice. I used long grain basmati rice in this recipe. Basmati rice works better for the fried rice. Boil and strain method is the best way of cooking the rice for fried rice.

1. Soak the basmati rice in water for 20 – 30 minutes. In a saucepan add water, salt, a tsp of oil and bring the water to a boil.

2. Add soaked rice and cook until the rice becomes soft. Strain the rice from water using a colander and allow to cool completely before start making the fried rice.

Smart Cooking Tips:

1. Avoid over cooking the rice, it should be little grainy. Use cold rice instead of warm or hot rice.

2. You can use other vegetables like corn, green beans, and capsicum. Avoid overcooking the vegetables it should be slightly crunchy.

3. Make sure to cook the eggs thoroughly before mixing with vegetables and rice. Otherwise, the fried rice will end up in a stinky smell.

4. Keep all the ingredients ready before start making the fried rice, this helps to avoid the vegetables and other ingredients getting burned.

Chicken fried rice is an easy one pot meal loaded with vegetables, chicken, eggs, and rice. If you have left-over rice handy, you can make fried rice in just a few minutes. You can also use leftover boneless, skinless grilled chicken in this recipe. Kids would also love this chicken fried rice. Chicken, eggs, vegetables and rice together makes a filling meal.   • 1 cup BASMATI RICE
  • 2 no EGGS
  • 0.50 cup CARROTS CHOPPED
  • 0.50 cup SWEET PEAS
  • 1 tsp SALT (to taste)
  • 2 tsp SOY SAUCE
  • 1 tsp CORN FLOUR
  • 3 tbsp OIL
  • 0.25 cup ONION CHOPPED
  • 0.50 tsp GARLIC CHOPPED
  • 2 tbsp SPRING ONIONS
  1. Cook rice separately according to the package directions and spread on a wide plate and allow to cool or left-over rice works better for this recipe.

  2. Chop the chicken into small bite sized pieces. Add salt, pepper powder, soy sauce, and cornflour to the chicken pieces. Add little amount of water and mix well.

  3. In a wide pan heat 2 tbsp of oil, add chicken and cook until the chicken gets cooked thoroughly. Remove the cooked chicken from a pan and keep aside until needed.

  4. In the same pan heat another tbsp of oil, add chopped garlic and cook until the garlic color changes to light golden brown.

  5. Add chopped onion and cook until the onion becomes soft. 

  6. Add chopped carrot and cook until the carrot becomes slightly soft. Add chopped cabbage, sweet peas and cook until the cabbage becomes slightly soft.

  7. Add soy sauce and mix well. Push the veggies to a corner of the pan and add eggs, salt, pepper powder and make scrambled eggs. Mix with the vegetables.

  8. Add cooked chicken, cooked rice, salt, pepper powder and mix well. Garnish with chopped spring onions and serve."

How to serve chicken fried rice?

Serve chicken fried rice with Chicken Manchurian or Cauliflower Manchurian.
