COCONUT COOKIES – GLUTEN FREE COOKIES

Coconut cookies are a healthy and gluten-free cookies with coconut and almond flour. These cookies taste sweet, soft and chewy with a slightly nutty flavor.

Gluten-free cookies:

Coconut cookies with almond flour is a delicious gluten-free cookie with only a few ingredients. Make sure to choose a gluten-free labelled vanilla extract. These cookies taste so yummy, sometimes I serve for dessert also. These cookies are healthier compared to the regular flour based cookies. Check out the other gluten-free cookies, gluten-free chocolate chip cookies and banana oatmeal cookies.

Smart Cooking Tips:

1. If you are using frozen shredded coconut, make sure to thaw completely before start using.

2. Adding chocolate chips are optional.

3. If you do not have almond flour, you can make at home easily by grinding the almonds using a blender. You can even use cashew nuts instead of almonds.

 

Coconut macaroon cookies:

These coconut cookies taste more like a coconut macaroon with a slight nutty flavor from the almond flour. Grated coconuts, eggs, and vanilla extract together taste like a coconut macaroon. You can serve these cookies as a snack or dessert. From kids to everyone loves this sweet, soft and chewy coconut cookies. These cookies are an excellent treat for the ones who loves coconut. Personally, I like chocolate and coconut combination, so I added chocolate chips to this cookie. Chocolate chips give an excellent taste to the cookies.

Ingredients
  • 2 cup COCONUT GRATED
  • 0.50 cup ALMOND FLOUR
  • 10 tbsp SUGARS GRANULATED
  • 2 no EGGS
  • 1 tsp VANILLA EXTRACT
Instructions
  1. Pre-heat the oven to 350 degrees and line the cookie sheet with parchment paper. 

  2. In a wide bowl, beat eggs and vanilla extract together until light and fluffy.

  3. Add sugar and mix well. Add almond flour, grated coconut and mix well until all the ingredients combined well. Fold in the chocolate chips

  4. Divide the dough into small portions and arrange on the parchment paper with 2-inch space apart.

  5. Bake in a pre-heated 350 degrees oven for 20 - 25 mins, until the coconut color changes to golden brown. Allow the cookies to cool and serve.

Serve coconut cookies as a snack or dessert.
