EGG FRIED RICE

Egg fried rice is easy, and quick one pot dish loaded with vegetables and egg. It is a simple and quick lunch box recipe. If you have leftover rice, it is simple to make in just a few mins.

Ingredients
  • 2 no EGGS
  • 1 cup CARROT CHOPPED
  • 2 cup CABBAGE CHOPPED
  • 0.50 cup SWEET PEAS
  • 0.50 cup ONIONS CHOPPED
  • 0.50 tbsp SOY SAUCE
  • 1 cup BASMATI RICE
  • 0.25 tsp PEPPER BLACK POWDER
  • 0.50 cup GREEN BEANS
  • 3 tbsp CANOLA OIL
  • 1 tsp GARLIC CHOPPED
Instructions
  1. Wash and soak the rice for rice 20 minutes. In a large pan add water, salt and oil allow it to boil. Add soaked rice and cook until the rice becomes soft (the rice should not be too soft). Drain the excess water and allow it to cool. 

  2. In a pan heat oil add chopped garlic and cook until nice aroma comes out. Add onion and cook until it becomes soft.

  3. Add Carrot, Beans and cook until half done. Add the cabbage and peas and cook until it gets cooked (Avoid overcooking the veggies it should be little crunchy for this recipe).

  4. Move the vegetables to one side of the pan and make a space for eggs. Add eggs, salt, and pepper. Mix well and cook until it gets cooked thoroughly.

  5. Add the cooked rice and soy sauce. Mix well and garnish it with spring onion.

How to serve egg fried rice?

Serve egg fried rice as it is or with Chicken Manchurian or with Fish Manchurian.
