Fruit cake is a traditional Christmas cake recipe loaded with dry fruits with a hint of rum flavor. Fruit cake recipes are easy and simple to bake at home.
Christmas Fruit Cake Recipe:
Traditional Christmas fruit cake made by soaking the dry fruits like raisins, cranberries, apricots, dates for at least couple of days and the cake is brushed liberally with dark rum for twice a week and store for at least two to three weeks before Christmas.
Fruit cake recipe also tastes mildly flavorful with spices like nutmeg, cinnamon, and cloves. Nutmeg and Cinnamon gives an excellent flavor to the cake.
I made this fruit cake with my favorite dry fruits and spices like raisins, cranberries, dates, ground cinnamon and nutmeg.
You can also add your favorite dry fruits, nuts and spices in this cake.
Smart Cooking Tips:
- You can also make this cake alcohol free by soaking the dry fruits in apple juice for a day.
2. I used my favorite dry fruits raisins, cranberries, and dates in the cake. You can also add dried chopped apricots and cherries. Also, you can add sliced almonds, chopped cashew nuts, and pecans. You can increase adding the dry fruits up to 3 cups.
- I used cinnamon powder and grated nutmeg in this cake. You can also add cloves powder in this cake.
If you don’t have store-bought spice powders at home, you can easily powder the cinnamon stick, cloves together with a little amount sugar and use it in the cake. Freshly grated nutmeg gives an excellent aroma and flavor to the cake.
- Cream the butter and sugar thoroughly. If the butter left without creaming properly, then it will form lumps in the cake.
- I used spiced rum; you can use any variety of rum. I soaked the dry fruits in rum for a couple of days, you can soak for up to a week.
6. Mix the soaked dry fruits in flour before baking the cake. This helps the dry fruits to stay evenly in the cake without sinking to the bottom of a cake.
7. Oven temperature varies I baked the cake for 55 minutes in 350 degrees. Keep checking the cake after 40 minutes at every five minutes interval by inserting the toothpick in the center of a cake.
If the toothpick comes out clean, the cake is done.
8. You can store this cake for a month in an airtight container by brushing with a generous amount of rum twice the time in a week. Poke the cake gently with a fork and brush the rum.

- 2 cup ALL PURPOSE FLOUR
- 1 cup SPICED RUM
- 1 cup RAISINS SEEDLESS
- 0.50 cup CRANBERRIES DRIED SWTND
- 1 cup BUTTER WITHOUT SALT
- 3 no EGGS
- 1 tsp VANILLA EXTRACT
- 1 tsp BAKING POWDER
- 0.50 cup WALNUTS
- 0.25 cup DATES MEDJOOL
- 1.50 cup SUGARS BROWN
- 0.50 tsp SALT TABLE
- 0.50 tsp NUTMEG GROUND
- 1 tsp CINNAMON
- 2 tbsp ALL PURPOSE FLOUR

Soak the raisins, dried cranberries, chopped dates in rum for 2 days. After 2 days, the dry fruits absorb the 75% of rum and it becomes soft and plump.

Pre-heat the oven to 350 degrees and line the bottom and sides of a baking pan with parchment paper.

Sift flour, baking powder and salt together. In a wide bowl, combine sifted flour mixture, cinnamon powder, and grated nutmeg together.

Strain the dry fruits from rum and reserve the rum separately. The reserved rum is about 4 - 5 tbsp approximately (you can add up to 4 tbsp of rum in the batter if you have more than 4 tbsp of rum reserve it for brushing the cake).

Add 2 tbsp of all purpose flour to the dry fruits and mix gently until all the dry fruits coat evenly with the flour.

Using an electric hand mixer cream the butter and sugar together until smooth.

Add the eggs, vanilla extract, reserved 4 tbsp of rum and blend again until all the ingredients incorporate well with each other.

Add the flour mixture and mix well until all the ingredients mix well with each other.

Fold in the dry fruits and mix gently using a spatula. Transfer it to a prepared baking pan and top with roasted walnuts. Slightly press the roasted walnuts in the batter ( You can also replace the walnuts with any of your favorite nuts).

Bake for 40 - 50 minutes or until the bamboo skewer inserted in the center and comes out clean. Keep on checking after 40 minutes at every 2 - 3 minutes interval by inserting the bamboo skewer in the center and comes out clean.

Allow the cake to cool in a pan slightly and transfer it to a wire rack. Allow the cake to cool completely.

Poke the cake gently using a fork or bamboo skewer and brush with the rum liberally. Cover the cake tightly with aluminum foil and store in a dry and clean airtight container.

Brush the cake with rum twice in a week and store up to 3 weeks in an airtight container.

Christmas fruit cake can be served warm or room temperature.
