I am a big fan of coconut milk and I use regularly in my cooking. Egg drop curry, Spinach pulao, Low-carb shrimp soup and quinoa chicken pulao are my favorite recipes using coconut milk.

- 1 cup Thai Kitchen Coconut Milk
- 2 tbsp Cocoa Powder
- 3 tbsp Chia Seeds
- 1 pinch Stevia Sweetener
- 0.50 tsp Vanilla Extract
- 2 tbsp Sliced Almonds, Sliced Strawberries (any toppings of your choice)

In a bowl, combine coconut milk, cocoa powder, chia seeds, stevia, vanilla extract, and mix well.

Cover and set in the refrigerator for at least 3 hours or overnight until the chia seeds plump up. Garnish with any of your favorite toppings.
