MOONG DAL SOUP WITH MIXED VEGETABLES

Moong dal soup with mixed vegetables is a healthy, low-calorie and filling soup. This soup is easy and simple to make in just a few minutes and tastes yummy.

Moong dal includes a good amount of protein and fiber. The fiber content in the moong dal makes us feel fuller for a long that helps in reducing the intake of food often. There are two varieties of moong dal, whole green moong dal, and yellow split moong dal. Whole green moong dal is rich in fiber content compared to yellow moong dal, so it takes a longer time to digest. Yellow moong dal is less in fiber and stays light in the tummy. You can make a variety of recipes using moong dal like moong dal dosa, moong dal ladoo, moong dal halwa, moong dal curry and moong dal pakora.

1. You can add other vegetables in this soup like cabbage, celery, green beans, and broccoli.

2. You can make this soup in a large saucepan or slow cooker instead of the pressure cooker. But pressure cooker helps to make this soup in a less time.

As I mentioned, moong dal is packed with fiber and protein. The smaller portion of moong dal makes us feel fuller for a long time. This soup is an excellent recipe for the weight watchers. Moong dal and vegetables together provide a good amount of fiber that keep us fuller and energetic for a long time. You can replace the heavy carbs based meal with this healthy soup. Ingredients
  • 0.50 cup MOONG DAL
  • 1 cup CARROTS CHOPPED
  • 1 cup PEAS
  • 1 cup SPINACH
  • 1 tsp GARLIC CHOPPED
  • 0.50 cup ONION CHOPPED
  • 1 tbsp OIL
  • 1.50 tsp SALT TABLE
  • 1 tsp PEPPER BLACK
Instructions
  1. In a pressure cooker, heat oil, add chopped garlic and saute until the garlic color changes to golden brown.

  2. Add chopped onion and cook until onion becomes soft.

  3. Add chopped carrot, peas, spinach and cook until the spinach leaves wilts. Add moong dal, water, salt and mix well. Cover the pressure cooker and cook for 3 - 4 whistles and allow the pressure cooker to cool naturally.

  4. Uncover the pressure cooker, add water and bring the soup to your desired consistency. Bring the soup to a boil, season with crushed black pepper and serve warm.

How to serve moong dal soup?

Serve moong dal soup with garlic bread or grilled chicken or meat for a filling meal or as it is for a light meal.
