Oatmeal Peanut Butter Energy Balls

Oatmeal peanut butter energy balls is an easy and healthy snack with only 4 ingredients. These energy balls are great for road trips and stay good for a week.

Excellent Post Workout Snack:

Oats, peanut butter and honey together make a wonderful post-workout snack. It together provides an energy to our system. Kids would also love this energy balls, a great after school snack for them. My son loves to eat them for breakfast too. These energy balls are loaded with fiber, protein and good carbs that makes us feel filling and energetic for a longer time.

It is a perfect snack to eat on the go. We carry these energy balls for long road trips too. It stays good for a week at room temperature and in the refrigerator for a couple of weeks.

Smart Cooking Tips:

  1. You can add dry fruits and coconut flakes in this recipe.

  2. Adjust adding the peanut butter for binding the energy balls.

  3. You could replace the peanut butter with almond butter and honey with maple syrup.

I regularly make energy balls for my family using the cuisine art food processor. It just combines all the ingredients together without much hassle. I have tried making energy balls using the blender/mixer, nut butter stuck to the bottom of the blades and it never turns out perfect.

Ingredients
  • 2 cups Oats
  • 0.50 cup Peanut Butter
  • 0.50 cup Honey
  • 0.25 tsp Vanilla Extract
Instructions
  1. Dry roast the oats until nice nutty aroma comes out and blend it to a powder.

  2. Add peanut butter, honey, vanilla extract and blend again until all the ingredients combined well.

  3. Shape them into small balls and serve or store in the refrigerator.
