Personally, I love raspberry fruit jam so I used as a filling. Peanut butter and jelly are made for each other. Together they both tastes amazing.

Peanut butter is low in carbs, high in fat and rich in protein. Though peanut butter is low in carb, make sure to consume the recommended quantity 2 to 3 tbsp to avoid calorie spike and ended up in gaining weight.

You could replace the low carb sweetener like stevia. Stevia is a natural plant-based sweetener much sweeter than the granulated white sugar, 1 cup of white sugar is replaced with only 1/2 teaspoon of stevia powder and 1 teaspoon of liquid stevia extract.

  1. Avoid over baking the cookies, 10 – 11 minutes are enough. Initially, the cookies are soft and gooey after cooled down it becomes firm.

Ingredients
  • 1 cup Jif creamy natural peanut butter
  • 0.50 cup Sugar
  • 1/2 tsp Vanilla Extract
  • 1 large Egg
  • 1/4 cup Smuckers Fruit Jam any flavor of your choice
Instructions
  1. Preheat the oven to 350 degrees oven and line the baking tray with parchment paper. 

  2. Combine all the ingredients together. Cling wrap the dough and set in the refrigerator for 10 – 15 minutes. 

  3. Divide the dough into small balls and make a dent on each cookie using your thumb gently.

  4. Fill the hole with the jam and bake in the preheated 350 degrees oven for 10 – 11 minutes. Let the cookies to cool and serve. Initially, the cookies are soft and gooey when it is warm. Once cooled down it would become firm.
