Aloo Shimla Mirch:
Potato capsicum fry is known as aloo
It is a dry side dish if you would like to make in the gravy consistency, add cumin seeds, chopped onion to the oil and saute until golden brown. Add cubed potatoes then add the spices like turmeric powder, red chili powder, coriander powder, garam masala and little amount of water. Cook until the potatoes roasted slightly. Add diced capsicum, cover and cook until the potatoes become soft. Add lemon juice, garnish with coriander leaves and serve.
Smart Cooking Tips:
- Keep stirring often to avoid the potatoes getting burned and sticking to the bottom of the pan.
- You could use other varieties of bell peppers like red, yellow, orange bell pepper or mixed of all.
- Traditionally, mango powder is added to this recipe. I just added the lemon juice instead of mango powder for the mild tangy taste.
Potato Capsicum Beans Fry:
