South Indian rice based recipes with quinoa like quinoa idly, quinoa fried rice and quinoa yogurt rice. Now almost thrice a time in a week I started enjoying quinoa without missing Indian flavor. A Smaller portion of quinoa only keeps me fuller for a long time, so it helps me to cut down the calories intake. As I mention before Quinoa is a healthy alternative to white rice, the cooking process also the same like white rice.
1. Rinse quinoa in water several times to take away the bitter coating (saponin) from quinoa. If the quinoa is not rinsed out well, it will taste bitter after cooking.
2. In a saucepan boil 2 cups of water with a pinch of salt and add a cup of quinoa. Cover and cook until the quinoa gets cooked or the water content absorbed the quinoa completely.
Smart Cooking Tips:
1. Rinse quinoa in water several times to take away the bitter coating (saponin) from quinoa. Use a fine mesh strainer to keep quinoa from falling out while rinsing.
2. Adding grapes and cashew nuts are optional. You can also add pomegranate and roasted peanuts in this recipe.
3. For the younger kids add finely chopped grapes and nuts to avoid choking.

- 0.50 cup QUINOA
- 1 cup WATER
- 0.50 tsp SALT TABLE
- 1 cup YOGURT
- 0.50 tsp CUMIN SEED
- 0.25 tsp MUSTARD SEEDS
- 0.50 tsp URAD DAL
- 1 no DRY RED CHILIES
- 4 gms CASHEW NUTS RAW
- 0.25 cup GRAPES
- 1 tsp OIL
- 0.25 tsp HING OR ASAFOETIDA

In a saucepan add water, pinch of salt and bring it to a boil. Add quinoa, cover and cook until the quinoa gets cooked and the water absorbed by the quinoa completely. Allow the quinoa to cool slightly.
For tampering: In a small pan heat a tsp of oil in a medium flame add mustard seeds and allow it to splutter, add urad dal, cumin seeds, asafoetida, red chilies and saute until the urad dal color changes into golden brown and the asafoetida loses its raw smell (all these process takes place in a second, so keep all the ingredients closer to you to avoid burning the mustard seeds and spices). Add cashew nuts and roast until the color changes into golden brown.
In a bowl add cooked quinoa, yogurt, Cashew nuts mixture, salt and mix well.
Add the chopped grapes and mix gently. Quinoa yogurt rice is ready to serve.
