Spinach Corn Sandwich

Spinach corn sandwich is a delicious and easy sandwich recipe with spinach and corn stuffing. It is excellent for the kids lunch box.

Sandwiches are an easy and filling meal idea for everyone. It works great when it comes to breakfast or dinner. Peanut butter jelly sandwich is our favorite breakfast and Avocado boiled egg sandwich is great for dinner. I usually stock up my pantry with two loaves of bread. I pack sandwiches for my son Aldrich’s lunch box at least twice a week. Check out the easy sandwich recipes.

Smart Cooking Tips:

  1. You can add grated cheese in this sandwich if you love cheese.
  2. You can add any of your favorite seasonings like oregano, red pepper flakes or parsley.
  3. I used frozen sweet corn that I thawed in the refrigerator, you can use fresh corn too. Make sure to boil the corn until soft before using in the recipe.

Tips to pack sandwiches for lunch:

I have a frequently asked question from my blog readers. How to pack sandwiches in the lunch without getting soggy?

Here are the few tips that I follow to pack sandwiches for lunch:

    1. Choose thick slices of bread. I usually prefer oat nut bread or whole grain bread instead of white bread.
    2. Apply a good amount of butter on both the sides of the bread. Butter helps to avoid the bread from getting soggy.
    3. Toast or grill the sandwiches until crispy.
    4. Pack mayonnaise or other stuffings like cucumber, tomato separately.

Ingredients
  • 4 no Bread Slices
  • 0.50 cup Corn
  • 1 cup Spinach Chopped
  • 2 tsp All Purpose Flour
  • 0.50 cup Milk
  • 0.25 tsp Black Pepper Powder
  • 0.50 tsp Salt
  • 1 tbsp Butter + extra for applying on the bread slices
  • 1 tsp Garlic Chopped
Instructions
  1. In a pan, melt butter, add garlic and saute until nice aroma comes out.

  2. Add corn and cook for 5 to 6 minutes. Add chopped spinach and cook until the spinach wilts.

  3. Add all purpose flour and mix well. Cook for 2 minutes. 

  4. Add milk, salt, pepper and mix well. Cook until it becomes thick, keep stirring to avoid forming lumps. Let it cool.

  5. Apply butter on the bread slices, place the filling in between the bread and grill or toast until crispy. Spinach corn sandwich is ready to serve.
