- 300 gms Rice Noodles
- 1 cup Shredded Cabbage
- 1 no Large Carrot Chopped Length Wise
- 1 cup Beans Chopped
- 1 no Capsicum Chopped
- 1 tbsp Thai Red Curry Paste
- 2 tbsp Oil
- 1 cup Coconut Milk
- 1 tsp Crushed Red Chili Flakes
- 2 tbsp Chopped Coriander Leaves
- 1 tsp Chopped Garlic
- 1.50 tsp Salt

Cook the rice noodles according to the package directions.

In a pan, heat oil, add chopped garlic, red curry paste and stir fry for a couple of minutes.

Add vegetables and stir fry for 5 – 6 minutes.
