Coconut cookies are a healthy and gluten-free cookies with coconut and almond flour. These cookies taste sweet, soft and chewy with a slightly nutty flavor.
Pre-heat the oven to 350 degrees and line the cookie sheet with parchment paper.
In a wide bowl, beat eggs and vanilla extract together until light and fluffy.
Add sugar and mix well. Add almond flour, grated coconut and mix well until all the ingredients combined well. Fold in the chocolate chips
Divide the dough into small portions and arrange on the parchment paper with 2-inch space apart.
Bake in a pre-heated 350 degrees oven for 20 - 25 mins, until the coconut color changes to golden brown. Allow the cookies to cool and serve.
