Boiled egg salad with avocado, onion, tomato and lemon juice in 20 minutes. A healthy protein rich salad with fresh vegetables and no mayonnaise.
Place the eggs in a saucepan with enough water to cover the eggs and bring it to a vigorous boil.
Remove the pan from heat and cover it with a lid. Let eggs sit in a hot water for 12 minutes. Discard the hot water and rinse the eggs with cold water. Crack open the eggs and chop them finely.
Dice the Avocados. Chop the onion and tomato finely. Combine chopped eggs, diced avocados, chopped onion, chopped tomatoes, lemon juice, salt and black pepper powder (add lemon juice, pepper, and salt according to your taste). Serve.
