Spinach Moong Dal Curry is an easy and healthy side in 25 minutes. Spinach Moong Dal Curry is made with yellow moong dal, onion, garlic, tomato, and spinach.
Rinse the spinach thoroughly in a cold running water. Rinse the moong dal separately.
In a pressure cooker add spinach, moong dal, 1.50 cup of water and cook up to four whistles. Turn off the heat and allow the pressure cooker to cool naturally. Open the pressure cooker and mash the dal and spinach together using a spoon and keep it ready.
In a pan, heat oil, add cumin seeds, asafoetida, red chilies and chopped garlic. Cook until the garlic color changes into golden brown.
Add chopped onion and cook until onion becomes soft. Add turmeric powder and mix well. Cook until turmeric powder loses its raw smell.
Add chopped tomato and cook until tomato becomes soft and mushy. Add mashed dal and spinach mixture, salt and mix well. Spinach moong dal curry is ready to be served.
