French toast roll ups with chocolate is an easy and sweet breakfast made by stuffing the bread with melted chocolate and flavored with cinnamon sugar.
In a bowl beat egg, milk, sugar and vanilla extract together. Cinnamon Sugar: Mix 2 tbsp of sugar and 1/2 tsp of cinnamon powder together. Keep it aside until needed.
Cut the crusts from bread slices and flatten each bread with a rolling pin.
For chocolate filling: In a microwave safe bowl add chocolate chips and melt in a microwave oven by heating the chocolate chips for 40 - 60 seconds or until the chocolate chips get melt completely. Take out the chocolate chips from the microwave oven at every 10 - 20 seconds interval and mix well. You can choose your favorite fillings like cream cheese, strawberries, jams, and Nutella.
Spread the melted chocolate on a slice of flattened bread and sprinkle chopped cashew nuts and roll gently. Repeat the same for the rest of the bread slices.
Heat a skillet and grease butter over a medium heat to coat inside of the skillet. Dip each bread roll in egg mixture and place on the skillet and toast on all the sides until the color changes into golden brown.
Roll the french toast rolls on the cinnamon sugar when it is warm and serve.
