Quinoa coconut rice is an easy, delicious and healthy recipe in just 30 minutes. It is an excellent lunch box recipe for everyone.
In a saucepan, add water, salt and bring to a boil. Add quinoa, cover and cook until the quinoa becomes soft and all the water gets absorbed by quinoa. Uncover the lid, mix gently and let it cool.
In another saucepan, heat oil, add mustard seeds and let it splutter. Add urad dal, asafoetida, curry leaves, dry red chilies, cashew nuts, and roast until the cashew nuts color changes to golden brown.
Add grated coconut and cook until the coconut gets roasted slightly. Add quinoa, mix well and serve.
