Tortilla pinwheels are the easy and delicious party appetizer. Rich creamy guacamole and spicy grilled shredded chicken filling wrapped in a soft corn tortilla.
For pan seared chicken: Slice the chicken breast thinly. In a pan, heat oil, add onion and cook until soft. Add bell pepper, chicken, soy sauce, coriander pepper, salt, and cook on high heat until the chicken is done. Add red chili sauce and mix well. Pan seared chicken is ready.
For the creamy guacamole: Blend cream cheese, avocado, salt, lemon juice, jalapeno pepper, and coriander leaves together. Add chopped onion, tomato and mix well.
Warm the tortillas for 30 sec on the skillet. Spread creamy guacamole, add chicken and roll. Cover the roll with plastic wrap or foil and refrigerate for at least 30 mins.
Cut them into small pieces using a sharp knife and serve.
