Ingredients
  • 300 gms Rice Noodles
  • 1 cup Shredded Cabbage
  • 1 no Large Carrot Chopped Length Wise
  • 1 cup Beans Chopped
  • 1 no Capsicum Chopped
  • 1 tbsp Thai Red Curry Paste
  • 2 tbsp Oil
  • 1 cup Coconut Milk
  • 1 tsp Crushed Red Chili Flakes
  • 2 tbsp Chopped Coriander Leaves
  • 1 tsp Chopped Garlic
  • 1.50 tsp Salt
Instructions
  1. Cook the rice noodles according to the package directions. 

  2. In a pan, heat oil, add chopped garlic, red curry paste and stir fry for a couple of minutes.

  3. Add vegetables and stir fry for 5 - 6 minutes. 

  4. Add coconut milk, salt, and mix well. Add cooked rice noodles and mix well. Garnish with chopped coriander leaves, red chili flakes and serve.
