Carrot rice is a quick and easy dinner which can be done with left-over rice. It is a best way to include the healthy Carrot in our everyday diet.
Cook the rice separately by adding 2 cups of water to 1 cup of long grain rice or according to the package directions and Keep aside.
Heat oil in a pan, add cumin seeds, curry leaves, onion, green chilies and cook until onion becomes soft.
Add the grated carrot, curry powder, salt and mix well. Add the cooked rice, mix well and serve.
