Cauliflower egg fried rice is a healthy, low-carb and paleo recipe. This paleo rice is easy and simple to make with just a few ingredients.
Pulse the cauliflower florets in the food processor to a small grain consistency. You can even grate the cauliflower florets in a carrot or cheese grater. Beat the eggs with salt and pepper separately and keep it ready.
In a pan, heat oil, add finely chopped garlic and saute until nice aroma comes out.
Add chopped onion and cook until the onion becomes soft. Add peas, cauliflower florets and cook for 3 - 4 minutes until the raw cauliflower smell goes off.
Push the cauliflower mixture to a corner of the pan and make space for eggs. Add eggs and make scrambled eggs and mix with the cauliflower mixture. Add salt, black pepper powder and mix well. Garnish with chopped green onions.
