Coconut milk chia seed pudding is an easy and delicious grab and go breakfast with only five ingredients. It is an excellent option for healthy dessert too.
In a bowl or mason jar, add coconut milk, chia seeds, honey, vanilla extract and mix well.
Set in the refrigerator for overnight or if you are serving as a dessert, set for 3 to 4 hours until it reaches the desired thickness. Add your favorite toppings like chopped nuts or fruits or toasted coconut and serve.
