As we all know Carrot is an excellent source of Vitamins and Anti-Oxidants. Regular consumption of carrot will help reduce cholesterol and blood sugar regulation. High Antioxidants called beta-carotene helps to prevent cancer.
Carrot is also believed to give skin softer and smoother.
How to make Carrot Rice?
Carrot rice is an easy and simple rice dish. Avoid overcooking the carrot, as soon you add it to the pan, give a quick mix with the onions and spices and turn off the heat. Carrots lose its nutritional values if you cook for a longer time.
Avoid adding too much salt in the carrot mixture. After mixing cooked rice with carrot mixture, check for the salt and add accordingly.
I added Curry Powder in this recipe; you can also substitute with Sambar Powder. Add curry powder or sambar powder according to your taste.
How to cook white rice?
White rice can be cooked in many ways like boil and strain method on a stove top, using a rice cooker and pressure cooker.
Add water according to the quality of your rice. I used long grain Royal Basmati rice for making this recipe. So I added 2 cups of water for 1 cup of rice. You can also use other rice varieties like Sona Masoori, etc.

Carrot Rice is a kid friendly recipe and also it a great way to incorporate carrot in their diet. Kids love this bright orange color rice dish. While making for kids avoid adding green chilies.
This best part in this carrot rice, it tastes good without any sides or with simple onion yogurt raita. I like to have this rice as it is.

- 4 cup CARROTS GRATED
- 0.50 tbsp CUMIN SEED
- 1 cup ONIONS CHOPPED
- 10 no CURRY LEAVES
- 1 tsp CURRY POWDER
- 1 cup BASMATI RICE
- 3 tbsp CANOLA OIL
- 2 no GREEN CHILIES
Cook the rice separately by adding 2 cups of water to 1 cup of long grain rice or according to the package directions and Keep aside.
Heat oil in a pan, add cumin seeds, curry leaves, onion, green chilies and cook until onion becomes soft.
Add the grated carrot, curry powder, salt and mix well. Add the cooked rice, mix well and serve.
