Spicy oven roasted okra is an easy and healthy recipe, a perfect addition to your menu. It tastes soft and slightly crispy with a mild flavor of spices.
Okra is my family’s favorite veggie that we consume regularly at our home, atleast 2 times a week. It is loaded with goodness like fiber, folate, and antioxidants. Roasting the okra in oven helps to eliminate the slimy texture, retain the nutrition, and tastes wonderful.
It is a convinient and easy way to cook okra in few minutes. I prefer roasting the okra in oven compared to cooking on the stove top.
Frozen Okra Recipes:
I used fresh okra in this recipe but frozen okra works well too. You can find frozen okra in the grocery stores at frozen section.
You do not need to thaw the frozen okra, just toss with the spices as it is and bake it in the oven. Frozen okra take a while longer (30 – 40 minutes) but eventually, you’ll end up with crispy, browned okra.
Keto Roasted Okra:
Okra is a low-carb and high – fiber veggie that is perfect for keto diet. This oven roasted okra is low in calorie, it includes the minimal amount of seasonings that is perfect addition to your the keto menu. It pairs well with grilled meat or salad.
Best Temperature to Roast Okra:
Okra does not with stand higher temperatures, it tends to get burned faster, 375 – 400 degrees Fahrenheit (depending on the oven) is the best temperature for roasting the okra. Make sure to check frequently to avoid the okra from getting burned.
Indian Okra Recipes
Okra is also known as bhindi in India and widely used in Indian cooking. It is used in many dishes like curries, gravies and stir fry. Okra buttermilk curry, Okra poriyal, Okra Masala Fry are the popular South Indian recipes. Oven roasted okras taste more like the fried ones. It tastes soft and slightly crispy, a healthy alternative to the deep-fried ones.
Smart Cooking Tips
- Adding spices like red chili powder and coriander powder are optional.
Make sure to wash and pat dry the okras using a clean kitchen towel before coating with oil and spices.
Baking time depends on the size of the okras. I used small and crunchy okras.

- 15 no Okra (Bhindi)
- 0.25 tsp Salt (to taste)
- 0.50 tsp Red Chili Powder
- 0.50 tsp Coriander Powder
- 1 tbsp Oil
Pre-heat the oven to 400 degrees. Wash and pat the okras dry using a clean kitchen towel.
Cut the tops off okra and slice lengthwise. Add salt, coriander powder, red chili powder, oil and mix well to coat.
Grease the baking sheet with oil and arrange okras in a single layer. Bake in a pre-heated 400 degrees oven for 10 mins or until the color starts changing to golden brown.
